Grilled Garlic Shrimp Skewers



Ingredients:
1 Pound shrimp (35 shrimps deveined and peeled)
4-5 bamboo skewers
3 garlic cloves minced
1 tsp salt
1 lemon juice
1 tsp of red chilli flakes
1 tsp chilli powder(optional)
1/2 tsp garlic powder(optional)
Cilantro leaves chopped fine.


 How i make it :
  • Soak bamboo skewers in water before grilling. Marinate the prawns with the above spice seasoning. Insert the shrimps or prawns into the bamboo skewer in a series.
  • Heat a grill pan with 2 tsp oil coating the pan. Grill in medium high heat each side for 4-5 minutes and prawns are totally cooked on each side.

          Serve hot with a sauce and salad.

Egg Fried Brown rice

Ingredients: 
1 1/2 cups of cooked brown rice
1/4 cup onion chopped
1/4 cup green onion chopped
1 cup red bell pepper chopped
3 garlic cloves chopped
1/4 tsp black pepper
1-2 tbsp soy sauce
2 eggs
1/4 tsp salt
1 1/2 tbsp oil
mushrooms (optional)

 How i make it :

  • Cook brown rice in electric rice cooker, in the mean time chop all the veggies and set aside.
  • In a deep dished wok or pan heat oil, and first add chopped garlic and fry for a minute, then add all the veggies and cook for 3 minutes.
  • Make a space between the cooking veggies and beat 2 eggs in the pan.
  • Fry the veggies along with scrambled egg, then add the cooked brown rice and season it with black pepper, salt and soy sauce and fry for 3  minutes. Check if the rice is too dry add a tbsp of water and keep stirring. Top it with green onions.
  • Serve it hot with your favourite meat or fish. Enjoy !

Stuffed Chicken Cheese Bell Pepper

This was a guest cook recipe by my Husband. He experiments when i am not around. This was a low carb low fat healthy recipe where the cooked ground chicken is stuffed inside a fresh grilled Bell pepper.




Ingredients:
1 cup ground chicken
1 Bell Pepper
1/2 sliced Onion
1/4 cup garam masala
chopped cilanthro
1/2 sliced tomato
1/2 lime
salt to taste
cheese
1 tbsp extra virgin Olive oil
1/4 tsp red chilli powder
pinch of turmeric powder
1 tbsp of ginger garlic paste



How he made it:
  • Marinate the ground chicken with ginger garlic paste, chilli powder, salt, turmeric and garam masala and 1 table spoon of fresh lemon juice and set aside.
  • In a heated pan add 1 table spoon extra virgin Olive oil
  • Saute the chopped onions until brown, add chopped tomatoes and saute whole thing for 3 to 5 minutes. 
  • Add the marinated chicken to the sauted onion tomato mix and fry until it completely cooked
  • Wash a Red Bell pepper and cut the rim of the pepper so that it serves as a 'lid' and add two table spoons of cheese in it...and fry along with the chicken until it becomes soften. 
  • Once chicken is done and cooked then stuff the chicken into the bell pepper and add 1 table spoon of cheese on the bell pepper...and close it with the 'bell pepper_lid'..close the pan with the lid.
  • Keep it for 5 mins in small flame..

 Take onto a plate and serve with fresh cut lemon, fresh raw onion and cilanthro.




Beerakaya Royyalu kura (Ridge gourd shrimp curry)



Ingredients:
2 ridge gourds (large)
1.5 pounds prawns or shrimp
1 med onion chopped
2 green chillis slit
few curry leaves
1 tsp jeera
3 tbsp oil
1 tbsp salt
1.5 tbsp chilli powder
tsp turmeric
1 tbsp ginger garlic paste
1 tsp garam masala powder (my Gm blended along with cumin and coriander)
coriander seeds for topping



 How i make it :
  • Clean the shrimp, and remove the shell and devein it. Marinate it with little chilli powder, turmeric, salt and set aside. Peel the skin of ridge gourd and chopped into small.
  • In a kadai or non stick pan, heat 3 tbsp oil and season with jeera seeds and curry leaves.
  • Add chopped onions and fry untill golden brown and add ginger galic paste and saute for 1 minute.
  • To the onions, add shrimp and let cook for 5 mins. Add chopped vegetable into the cooking shrimp, and add chilli powder, turmeric, salt and cover and cook for atleast 10 mins untill water comes out and sucked in.
  • Stir in the garam masala and cook for another 3 mins. Check it out the curry shouldn't be dry. If dry add little water and off the heat. Garnish it with cilantro leaves.
         Enjoy this dish with Chapathi ot rice.

Chicken fry (chicken vepudu)

Ingredients:

1 kg Chicken
2 tbsp ginger-garlic paste
2 medium onions chopped
2-3 green chillis
3-4 tbsp oil
1 tsp garam masala
1 tbsp chilli powder
2 tbsp yogurt
1 tsp turmeric
salt to taste
2 tbsp water


How i make it:

  1. Heat the non stick pan and add oil, once the oil is hot add chopped onions, green chillis and cook untill  light golden color.
  2. Add ginger garlic paste to the onions and fry untill raw smell is away.
  3. Add the chicken to the onion mixture, then add yogurt, chilli powder, salt, turmeric and stir it.
  4. Cover the pan for 5-10 mins untill the water oozing from chicken and give an another stir and cover. Add some 2 tbsp water at this point which  makes chicken tender.
  5. Cook untill all the water goes away, and keep stirring untill chicken slowly start to fry. Fry for 3-5 mins
  6. Add chopped coriander leaves to the frying chicken and still fry it for 2 mins and off the heat.
  7. Wait for 5 mins before serving.

Serve hot with rice or chapathi with a wedge of lemon a side ;)
Enjoy !

Note: If wanted, can marinate the chicken an hour before with lemon, yogurt, chilli powder, ginger garlic paste and salt.

Turkey Burger with Oven fries


Ingredients:

1/2 pound ground turkey breast
1 small onion finely chopped
2 tsp grated garlic or giner garlic paste
1/2 tsp chilli powder
freshly ground black pepper
salt to taste
1/4 bread crumbs ( i made it from multigrain cracker crumbs)
oil to grease the pan
1 Egg for binding

Oven fries:
2 medium potatoes (skin peeled off)  cut into wedges
1/2 tsp of garlic, chilli powder, black pepper, salt, oil.
Bake at 400 F for 25 mintues or untill brown.



Preparation:

Heat grill pan. In the bowl add ground turkey add chopped onions, fresh ground black pepper, chilli powder, ginger garlic paste, egg and bread crumbs . Mix all the ingredients well. Take half of the mixture into 2 hands and make into a patty. Grease the Heated grill pan then grill it on medium heat. For the grill marks on the patty turn the grill patty into 90 degrees (should be cooked horizontal & vertical on same side).

Serve it with a corn meal bun or your favourite bun layered with lettuce and tomato slices with mayonaise dressing. Enjoy oven fries for the side.
