Spicy Tomato and Cilantro Soup

This heartwarming soup is always delicious and perfect for cold winter day. 

Ingredients:

2 tbsp oil
3 large tomatoes
1 bunch cilantro
2 bay leaves
2 green onions
5-6 leaves of mint
3 garlic gloves
1 tsp ground black pepper
1 tsp salt
3 cups of water
1 tsp corn starch
1 tbsp cream( optional)
 How i make it :
  1. To peel the tomatoes, plunge them into very hot water. The skin comes out easily and chop the tomatoes roughly.
  2. In a medium size saucepan, heat the oil. Add the tomatoes, bay leaf, green onions and fry for few  minutes untill soft and translucent, but not brown.
  3. Add the salt, cilantro, chopped garlic, black pepper to the tomato mixture.

4. Stir in 3 1/2 cups of water.


5. Bring the mixture to a boil. Lower the heat for 15 minutes. Meanwhile dissolve the cornstarch in a little cold water and set aside.

 6. Remove the soup from the heat and press it in a strainer placed on the bowl. Blend the pressed vegetables into a paste add some salt and pepper and can be served side to Idli (optional).

 7.  Return the soup to the pan and add the cornstarch mixture and stir over low heat for 3 minutes untill thick.
Serve hot into a individual bowl and top it with croutons or cream on the top.
