Flaxseed Oatmeal Pancakes

Sunday morning breakfast with a touch of flax meal & oatmeal for extra fiber into the system.


Ingredients: 
3 tbsps flax meal (ground flax seed)
1/4 cup oat flour (made from processing rolled oats)
1/2 cup all purpose flour
1 tsp vanilla extract
1 egg
1/3 cup milk
1 tsp sugar
1/2 tsp baking powder
1/2 tsp baking soda
Pinch of salt
1 tsp oil
Maple syrup or honey for topping

 How i make it :
  • In a large bowl, combine the flour, oatmeal flour, flax meal, baking  powder and soda, salt, sugar.
  • In a small bowl, beat the egg and stir in milk, vanilla extract and oil. Combine all the ingredients into a batter.
  • Heat the non stick pan or griddle and coat it with cooking spray or oil, pour the batter by small cup on the pan and cook untill godlen brown untill tiny bubbles form on the top. Flip and cook the other side. At this point add apples or strwberries or blueberries or choco chips on the top (but these are plain :) )
  • Serve hot with Maple syrup or honey. Makes 6-7 pancakes.
