Flax Apple Cinnamon cupcakes

Everyone likes sweet treat, but i prepared these treat with touch of fiber with flax seed meal. These cupcakes would be more good for breakfast which boosts the metabolism with cinnamon. Enjoy these beauties with a cup of coffee.




 Ingredients:
1 1/4 cup maida or all purpose flour
1/4 cup flax seed meal
1 tsp cinnamon
1 cup apple (peeled, cored and chopped)
2/3 cup brown sugar
2 tbsp butter
1 large egg
1/2 cup buttermilk
1 tsp baking powder
1/2 tsp baking soda
1/4 tsp salt
1 tsp vanilla extract
1/2 chopped almonds or walnuts (optional)


How i make it :

       Preheat the oven to 375 F.
  • Mix all the dry ingredients ( flour, cinnamon, salt, baking powder and soda) in a bowl and set aside
  • Beat 1 egg and to it add brown sugar, buttermilk, vanilla and melted butter.
  • Mix all the dry and wet ingredients


  • Add peeled and chopped apples and flax meal into the mix, and stir well untill you see no lumps.
  • Grease the muffin tins or add muffin cups and add the batter slowly into each compartment.
  • Bake it for 25 mins. Makes 10-12  muffins.
